Oatmeal Muffins

Simple and delicious oatmeal muffins, perfect for a quick breakfast or snack.

Ingredients

  • 1 cup Cooked oatmeal (Use your favorite cooked oatmeal recipe or instant oatmeal prepared according to package directions.)
  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 4 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Milk
  • 1 Egg
  • 2 tablespoons Melted butter

Instructions

  1. 1Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  2. 2In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. 3In a separate bowl, combine the cooked oatmeal, milk, egg, and melted butter. Mix well.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. 6Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
