Moulded Snow with Chocolate Ice
A simple molded dessert, similar to Rebecca Pudding, served with a rich chocolate ice cream.
Ingredients
- 4 cups Milk
- 0.5 cup Sugar
- 2 tablespoons Gelatin (Unflavored gelatin)
- 1 teaspoon Vanilla extract
- 1 cup Heavy cream
- 6 ounces Dark chocolate
- 2 Eggs
Instructions
- 1In a small bowl, sprinkle the gelatin over 1/2 cup of cold milk. Let it stand for 5 minutes to soften.
- 2In a saucepan, combine the remaining 3 1/2 cups of milk and sugar. Heat over medium heat, stirring until the sugar is dissolved. Do not boil.
- 3Remove the milk mixture from the heat and stir in the softened gelatin until it is completely dissolved. Stir in the vanilla extract.
- 4Stir in the heavy cream. Pour the mixture into a mold or individual serving dishes. Refrigerate for at least 4 hours, or until set.
- 5Melt chocolate in a double boiler. Whisk eggs and sugar until pale. Slowly add melted chocolate. Cool. Churn in an ice cream maker according to manufacturer's instructions.
- 6Unmold the set pudding and serve with scoops of chocolate ice cream.
