Moulded Snow with Chocolate Ice

A simple molded dessert, similar to Rebecca Pudding, served with a rich chocolate ice cream.

Ingredients

  • 4 cups Milk
  • 0.5 cup Sugar
  • 2 tablespoons Gelatin (Unflavored gelatin)
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 6 ounces Dark chocolate
  • 2 Eggs

Instructions

  1. 1In a small bowl, sprinkle the gelatin over 1/2 cup of cold milk. Let it stand for 5 minutes to soften.
  2. 2In a saucepan, combine the remaining 3 1/2 cups of milk and sugar. Heat over medium heat, stirring until the sugar is dissolved. Do not boil.
  3. 3Remove the milk mixture from the heat and stir in the softened gelatin until it is completely dissolved. Stir in the vanilla extract.
  4. 4Stir in the heavy cream. Pour the mixture into a mold or individual serving dishes. Refrigerate for at least 4 hours, or until set.
  5. 5Melt chocolate in a double boiler. Whisk eggs and sugar until pale. Slowly add melted chocolate. Cool. Churn in an ice cream maker according to manufacturer's instructions.
  6. 6Unmold the set pudding and serve with scoops of chocolate ice cream.
