Modern Wine Cream
A modernized version of a classic wine cream dessert, featuring ladyfingers, sherry, and a light, frothy texture.
Ingredients
- 12 Ladyfingers (Or slices of sponge cake)
- 0.33 cup Granulated Sugar
- 0.5 teaspoon Lemon Rind (Grated from half a lemon)
- 1 tablespoon Lemon Juice (From half a lemon)
- 0.25 cup Sherry Wine
- 2 Egg Yolks
- 2 Egg Whites
Instructions
- 1Arrange ladyfingers or slices of sponge cake in a serving dish.
- 2In a heatproof bowl, mix together the sugar, grated lemon rind, lemon juice, sherry wine, and egg yolks.
- 3Place the bowl over a pot of simmering water (double boiler). Stir vigorously with a wire whisk until the mixture thickens and becomes frothy. This should take about 5-8 minutes.
- 4In a separate clean bowl, beat the egg whites until stiff peaks form.
- 5Gently fold the beaten egg whites into the warm cream mixture. Pour the mixture over the ladyfingers in the serving dish. Serve immediately or chill for a short time before serving.
