Modern Wine Cream

A modernized version of a classic wine cream dessert, featuring ladyfingers, sherry, and a light, frothy texture.

Ingredients

  • 12 Ladyfingers (Or slices of sponge cake)
  • 0.33 cup Granulated Sugar
  • 0.5 teaspoon Lemon Rind (Grated from half a lemon)
  • 1 tablespoon Lemon Juice (From half a lemon)
  • 0.25 cup Sherry Wine
  • 2 Egg Yolks
  • 2 Egg Whites

Instructions

  1. 1Arrange ladyfingers or slices of sponge cake in a serving dish.
  2. 2In a heatproof bowl, mix together the sugar, grated lemon rind, lemon juice, sherry wine, and egg yolks.
  3. 3Place the bowl over a pot of simmering water (double boiler). Stir vigorously with a wire whisk until the mixture thickens and becomes frothy. This should take about 5-8 minutes.
  4. 4In a separate clean bowl, beat the egg whites until stiff peaks form.
  5. 5Gently fold the beaten egg whites into the warm cream mixture. Pour the mixture over the ladyfingers in the serving dish. Serve immediately or chill for a short time before serving.
