Modern Welsh Rarebit
A modernized version of the classic Welsh Rarebit, a savory cheese sauce served over toast.
Ingredients
- 2 tablespoons Butter (For richness and flavor)
- 2 teaspoons Cornstarch (To thicken the sauce)
- 1 cup Heavy cream (Adds richness and creaminess)
- 8 ounces Sharp cheddar cheese (Shredded, for easy melting)
- 0.25 teaspoon Salt (To taste)
- 0.5 teaspoon Dijon mustard (Adds a tangy flavor)
- 0.125 teaspoon Cayenne pepper (A pinch, for a little heat)
- 0.5 teaspoon Worcestershire sauce (Adds umami)
- 4 slices Toast (For serving)
Instructions
- 1In a saucepan over medium heat, melt the butter.
- 2Add the cornstarch to the melted butter and stir until well mixed, forming a smooth paste (a roux). Cook for 1 minute.
- 3Gradually add the heavy cream, while stirring constantly with a whisk, and cook for 2 minutes, until the sauce thickens slightly.
- 4Reduce heat to low. Add the shredded cheddar cheese, salt, Dijon mustard, cayenne pepper, and Worcestershire sauce. Stir until the cheese is completely melted and the sauce is smooth and creamy. This should take about 3-4 minutes.
- 5Pour the Welsh Rarebit sauce over the prepared toast and serve immediately.
