Modern Waffles

A modernized version of a classic waffle recipe, perfect for a delicious breakfast or brunch.

Ingredients

  • 1.5 cups Boiling water
  • 0.5 cup White corn meal
  • 1.5 cups Milk
  • 3 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1.25 tablespoons Baking powder
  • 1.5 teaspoons Salt
  • 2 Egg yolks
  • 2 Egg whites
  • 2 tablespoons Melted butter

Instructions

  1. 1In a saucepan, cook the cornmeal in boiling water for 20 minutes, stirring occasionally to prevent sticking.
  2. 2Add milk to the cooked cornmeal mixture. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  3. 3In a small bowl, lightly beat the egg yolks. Add the beaten yolks and melted butter to the batter and mix gently. In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter.
  4. 4Preheat your waffle iron according to the manufacturer's instructions. Pour the batter onto the hot waffle iron and cook until golden brown and crispy, usually 3-5 minutes per waffle.
  5. 5Serve immediately with your favorite toppings, such as syrup, fruit, or whipped cream.
