Modern Waffles
A modernized version of a classic waffle recipe, perfect for a delicious breakfast or brunch.
Ingredients
- 1.5 cups Boiling water
- 0.5 cup White corn meal
- 1.5 cups Milk
- 3 cups All-purpose flour
- 3 tablespoons Granulated sugar
- 1.25 tablespoons Baking powder
- 1.5 teaspoons Salt
- 2 Egg yolks
- 2 Egg whites
- 2 tablespoons Melted butter
Instructions
- 1In a saucepan, cook the cornmeal in boiling water for 20 minutes, stirring occasionally to prevent sticking.
- 2Add milk to the cooked cornmeal mixture. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- 3In a small bowl, lightly beat the egg yolks. Add the beaten yolks and melted butter to the batter and mix gently. In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter.
- 4Preheat your waffle iron according to the manufacturer's instructions. Pour the batter onto the hot waffle iron and cook until golden brown and crispy, usually 3-5 minutes per waffle.
- 5Serve immediately with your favorite toppings, such as syrup, fruit, or whipped cream.
