Modern Veal Loaf
A modernized version of a classic veal loaf recipe, featuring finely ground veal, salt pork, and simple seasonings, baked to perfection.
Ingredients
- 1.5 pounds Lean Veal (Original recipe calls for 3 pounds, which is a large amount for modern servings. Reduce to 1.5 pounds.)
- 0.25 pound Fat Salt Pork (Finely chopped)
- 3 crackers Common Crackers (Rolled into crumbs)
- 2 tablespoons Heavy Cream
- 1 tablespoon Lemon Juice
- 0.5 tablespoon Salt
- 0.25 tablespoon Black Pepper
- 3 drops Onion Juice
- 1 large Egg White
- 0.125 cup Pork Fat (For basting)
Instructions
- 1Wipe the veal and remove any skin and membrane. Chop the veal and salt pork finely or force them through a meat grinder.
- 2In a large bowl, combine the ground veal and salt pork with the cracker crumbs, cream, lemon juice, salt, pepper, and onion juice. Mix well until all ingredients are evenly distributed.
- 3Pack the mixture into a small bread pan. Smooth the top evenly and brush with the white of an egg.
- 4Bake slowly at 325°F (160°C) for 3 hours, basting with pork fat every 30 minutes. Prick the loaf frequently while baking to allow the pork fat to be absorbed by the meat.
- 5Cool the veal loaf completely before removing it from the pan. Cut into thin slices and serve.
