Modern Tomato Rarebit

A modernized version of Tomato Rarebit, a savory cheese sauce served over toast, enhanced with fresh tomatoes and herbs.

Ingredients

  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 0.75 cup Heavy cream
  • 4 ounces Sharp cheddar cheese, grated
  • 1 medium Tomato, diced
  • 1 teaspoon Worcestershire sauce
  • 0.25 teaspoon Dry mustard
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 2 Bread slices

Instructions

  1. 1In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to create a smooth roux.
  2. 2Gradually whisk in the cream until smooth. Reduce heat to low and stir in the grated cheddar cheese until melted and smooth.
  3. 3Stir in the diced tomato, Worcestershire sauce, dry mustard, salt, and black pepper. Cook for another 2 minutes, stirring occasionally, until the tomato is heated through.
  4. 4Toast the bread slices. Spoon the tomato rarebit over the toast and serve immediately.
