Modern Tomato Rarebit
A modernized version of Tomato Rarebit, a savory cheese sauce served over toast, enhanced with fresh tomatoes and herbs.
Ingredients
- 2 tablespoons Butter
- 2 tablespoons All-purpose flour
- 0.75 cup Heavy cream
- 4 ounces Sharp cheddar cheese, grated
- 1 medium Tomato, diced
- 1 teaspoon Worcestershire sauce
- 0.25 teaspoon Dry mustard
- 0.25 teaspoon Salt
- 0.125 teaspoon Black pepper
- 2 Bread slices
Instructions
- 1In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to create a smooth roux.
- 2Gradually whisk in the cream until smooth. Reduce heat to low and stir in the grated cheddar cheese until melted and smooth.
- 3Stir in the diced tomato, Worcestershire sauce, dry mustard, salt, and black pepper. Cook for another 2 minutes, stirring occasionally, until the tomato is heated through.
- 4Toast the bread slices. Spoon the tomato rarebit over the toast and serve immediately.
