Modern Swiss Potato and Turnip Soup
A simple and comforting Swiss potato soup with turnip, updated for modern kitchens.
Ingredients
- 4 medium Potatoes (Peeled and diced)
- 1 large Turnip (Peeled and diced)
- 1 medium Onion (Diced)
- 6 cups Vegetable broth
- 1 cup Heavy cream
- 2 tablespoons Butter
- 1 teaspoon Salt (Or to taste)
- 0.5 teaspoon Black pepper (Or to taste)
- 2 tablespoons Fresh parsley (Chopped, for garnish)
Instructions
- 1In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.
- 2Add the diced potatoes and turnip to the pot. Stir to combine with the onions and butter.
- 3Pour in the vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the potatoes and turnip are tender.
- 4Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth. Be cautious when blending hot liquids.
- 5Return the soup to the pot. Stir in the heavy cream and season with salt and pepper to taste. Heat through gently, but do not boil.
- 6Ladle the soup into bowls and garnish with fresh parsley. Serve hot.
