Modern Swiss Potato and Turnip Soup

A simple and comforting Swiss potato soup with turnip, updated for modern kitchens.

Ingredients

  • 4 medium Potatoes (Peeled and diced)
  • 1 large Turnip (Peeled and diced)
  • 1 medium Onion (Diced)
  • 6 cups Vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoons Butter
  • 1 teaspoon Salt (Or to taste)
  • 0.5 teaspoon Black pepper (Or to taste)
  • 2 tablespoons Fresh parsley (Chopped, for garnish)

Instructions

  1. 1In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.
  2. 2Add the diced potatoes and turnip to the pot. Stir to combine with the onions and butter.
  3. 3Pour in the vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the potatoes and turnip are tender.
  4. 4Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth. Be cautious when blending hot liquids.
  5. 5Return the soup to the pot. Stir in the heavy cream and season with salt and pepper to taste. Heat through gently, but do not boil.
  6. 6Ladle the soup into bowls and garnish with fresh parsley. Serve hot.
