Modern Succotash
A modern take on succotash, featuring fresh corn and beans, enhanced with butter and seasonings.
Ingredients
- 4 ears Fresh corn on the cob (Or 2 cups frozen corn kernels)
- 2 cups Fresh lima beans (Shelled, or 1 cup frozen lima beans)
- 4 tablespoons Butter (Unsalted)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Freshly ground, or to taste)
Instructions
- 1If using fresh corn, bring a large pot of salted water to a boil. Add the corn on the cob and boil for 5 minutes. Remove from the water and let cool slightly. Once cool enough to handle, cut the kernels from the cob.
- 2If using fresh lima beans, shell them. Bring a small pot of salted water to a boil. Add the shelled lima beans and boil for 5 minutes, or until tender. Drain the beans.
- 3In a medium saucepan, melt the butter over medium heat. Add the corn kernels and lima beans. Season with salt and pepper. Cook, stirring occasionally, until heated through, about 5 minutes.
- 4Serve hot as a side dish.
