Modern Sponge Cake

A light and airy sponge cake, updated for modern kitchens with clear instructions.

Ingredients

  • 3 Egg Yolks (From large eggs)
  • 1 cup Granulated Sugar
  • 1 tablespoon Hot Water
  • 1 cup All-Purpose Flour
  • 1.5 teaspoons Baking Powder
  • 0.25 teaspoon Salt
  • 3 Egg Whites (From large eggs)
  • 2 teaspoons White Vinegar

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan. Alternatively, line the bottom with parchment paper.
  2. 2In a large bowl, beat the egg yolks until thick and lemon-colored (about 3-5 minutes). Gradually add the sugar while continuing to beat until well combined and slightly thickened.
  3. 3Add the hot water to the yolk mixture and beat until combined (about 30 seconds).
  4. 4In a separate bowl, whisk together the flour, baking powder, and salt.
  5. 5Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. 6In a clean, dry bowl, beat the egg whites until stiff peaks form. Add the vinegar and beat for another 30 seconds.
  7. 7Gently fold the beaten egg whites into the batter in two or three additions, being careful not to deflate the whites. Use a spatula for this step.
  8. 8Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. 9Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
