Modern Spanish Sauce

A rich and savory sauce made with ham, vegetables, and brown stock, perfect for enhancing meat dishes.

Ingredients

  • 2 tablespoons Lean raw ham, finely chopped
  • 2 tablespoons Celery, finely chopped
  • 2 tablespoons Carrot, finely chopped
  • 1 tablespoon Onion, finely chopped
  • 0.25 cup Butter
  • 0.25 cup All-purpose flour
  • 1.33 cups Brown Stock
  • 1 teaspoon Sugar (Optional, to balance flavors)

Instructions

  1. 1In a saucepan, melt the butter over medium heat. Add the chopped ham, celery, carrot, and onion. Sauté until the vegetables are softened and the ham is lightly browned.
  2. 2Sprinkle the flour over the sautéed vegetables and ham. Cook, stirring constantly, for 2-3 minutes until the flour is incorporated and the mixture is lightly browned. This creates a roux, which will thicken the sauce.
  3. 3Gradually whisk in the brown stock, ensuring there are no lumps. Bring the sauce to a simmer, stirring occasionally.
  4. 4Reduce the heat to low and simmer the sauce for 15-20 minutes, or until it has thickened to your desired consistency. Stir occasionally to prevent sticking. Season with salt, pepper, and a pinch of sugar (if desired) to taste.
