Modern Spanish Sauce
A rich and savory sauce made with ham, vegetables, and brown stock, perfect for enhancing meat dishes.
Ingredients
- 2 tablespoons Lean raw ham, finely chopped
- 2 tablespoons Celery, finely chopped
- 2 tablespoons Carrot, finely chopped
- 1 tablespoon Onion, finely chopped
- 0.25 cup Butter
- 0.25 cup All-purpose flour
- 1.33 cups Brown Stock
- 1 teaspoon Sugar (Optional, to balance flavors)
Instructions
- 1In a saucepan, melt the butter over medium heat. Add the chopped ham, celery, carrot, and onion. Sauté until the vegetables are softened and the ham is lightly browned.
- 2Sprinkle the flour over the sautéed vegetables and ham. Cook, stirring constantly, for 2-3 minutes until the flour is incorporated and the mixture is lightly browned. This creates a roux, which will thicken the sauce.
- 3Gradually whisk in the brown stock, ensuring there are no lumps. Bring the sauce to a simmer, stirring occasionally.
- 4Reduce the heat to low and simmer the sauce for 15-20 minutes, or until it has thickened to your desired consistency. Stir occasionally to prevent sticking. Season with salt, pepper, and a pinch of sugar (if desired) to taste.
