Modern Sliced and Boiled Cucumbers
A modernized take on preparing cucumbers, offering both a refreshing sliced version and a cooked, seasoned option.
Ingredients
- 2 medium Cucumber (For both sliced and boiled versions)
- 1 teaspoon Salt (For boiling cucumbers)
- 2 tablespoons Butter (For boiled cucumbers)
- 0.5 teaspoon Black Pepper (For boiled cucumbers)
- as needed Ice (For serving sliced cucumbers)
Instructions
- 1Wash the cucumbers thoroughly. For both sliced and boiled cucumbers, remove a thick slice from both ends of each cucumber. Cut off a thick paring, as the cucumber contains a bitter principle, a large quantity of which lies near the skin and stem end.
- 2Cut one cucumber into thin slices. Place the slices in a bowl of cold water and keep refrigerated until ready to serve. Drain the water before serving and cover with crushed ice.
- 3Cut the remaining cucumber into pieces. Place the cucumber pieces in a pot with salted water. Bring to a boil and cook until soft, about 15 minutes. Drain the water.
- 4Mash the cooked cucumber pieces with butter, salt, and pepper. Serve hot.
