Modern Scalloped Turkey
A modernized version of Scalloped Turkey, featuring a creamy sauce and crispy cracker crumb topping. Perfect for using leftover roast turkey.
Ingredients
- 4 tablespoons Butter
- 4 tablespoons All-purpose flour
- 0.25 teaspoon Salt
- 0.0625 teaspoon Black pepper (A few grains)
- 1.5 cups Turkey stock
- 2 cups Cooked turkey, diced
- 1 cup Cracker crumbs (such as Ritz)
Instructions
- 1In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the turkey stock until smooth. Bring to a simmer, then reduce heat and simmer for 5 minutes, stirring occasionally. Season with salt and pepper.
- 2Dice the cooked turkey into small pieces. In a separate bowl, melt the remaining 2 tablespoons of butter. Add the cracker crumbs and toss to coat.
- 3Preheat oven to 375°F (190°C). Lightly butter a baking dish. Sprinkle the bottom of the dish with some of the seasoned cracker crumbs. Add the diced turkey, pour over the sauce, and sprinkle with the remaining buttered cracker crumbs. Bake in the preheated oven for 25-30 minutes, or until the crumbs are golden brown and the sauce is bubbly.
