Modern Scalloped Tomatoes
A modernized version of scalloped tomatoes, featuring a balance of savory and sweet flavors with a crispy, buttery crumb topping.
Ingredients
- 28 ounces Canned diced tomatoes
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
- 0.5 teaspoon Onion juice (About 1/4 of a small onion, juiced)
- 1 tablespoon Granulated sugar (Optional, adjust to taste)
- 0.5 cup Butter, melted
- 1.5 cups Cracker crumbs (Ritz or similar buttery crackers work well)
Instructions
- 1Drain the canned tomatoes, reserving about 1/4 cup of the liquid. In a bowl, combine the drained tomatoes, salt, pepper, onion juice, and sugar (if using). Stir to combine.
- 2In a separate bowl, combine the melted butter and cracker crumbs. Mix well until the crumbs are evenly coated with butter.
- 3Preheat oven to 375°F (190°C). Butter a baking dish (8x8 inch or similar). Spread a layer of buttered cracker crumbs on the bottom of the dish. Cover with the tomato mixture. Sprinkle the remaining buttered crumbs evenly over the top. Bake for 25-30 minutes, or until the crumbs are golden brown and the tomatoes are bubbly.
