Modern Scalloped Chicken
A comforting and updated version of scalloped chicken, featuring layers of chicken, macaroni, and a creamy sauce, topped with buttery cracker crumbs.
Ingredients
- 3 cups Cooked Chicken (Shredded or diced)
- 2 cups Elbow Macaroni (Cooked according to package directions)
- 4 tablespoons Butter (Divided)
- 3 tablespoons All-Purpose Flour
- 2 cups Milk
- 1 cup Chicken Broth
- 0.5 teaspoon Salt
- 0.25 teaspoon Black Pepper
- 1 cup Cracker Crumbs (Ritz or similar buttery crackers)
Instructions
- 1Preheat oven to 375°F (190°C). Butter a 9x13 inch baking dish with 1 tablespoon of butter.
- 2In a saucepan, melt 3 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk and chicken broth until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5 minutes. Season with salt and pepper.
- 3In the prepared baking dish, arrange alternate layers of cooked chicken and cooked macaroni. Pour the sauce evenly over the layers.
- 4Sprinkle the cracker crumbs evenly over the sauce. Bake in the preheated oven for 25-30 minutes, or until the crumbs are golden brown and the casserole is bubbly.
- 5Let the casserole cool for a few minutes before serving.
