Modern Scalloped Chicken

A comforting and updated version of scalloped chicken, featuring layers of chicken, macaroni, and a creamy sauce, topped with buttery cracker crumbs.

Ingredients

  • 3 cups Cooked Chicken (Shredded or diced)
  • 2 cups Elbow Macaroni (Cooked according to package directions)
  • 4 tablespoons Butter (Divided)
  • 3 tablespoons All-Purpose Flour
  • 2 cups Milk
  • 1 cup Chicken Broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 cup Cracker Crumbs (Ritz or similar buttery crackers)

Instructions

  1. 1Preheat oven to 375°F (190°C). Butter a 9x13 inch baking dish with 1 tablespoon of butter.
  2. 2In a saucepan, melt 3 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk and chicken broth until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5 minutes. Season with salt and pepper.
  3. 3In the prepared baking dish, arrange alternate layers of cooked chicken and cooked macaroni. Pour the sauce evenly over the layers.
  4. 4Sprinkle the cracker crumbs evenly over the sauce. Bake in the preheated oven for 25-30 minutes, or until the crumbs are golden brown and the casserole is bubbly.
  5. 5Let the casserole cool for a few minutes before serving.
