Modern Sauce Tyrolienne

Modern Sauce Tyrolienne

A modernized version of Sauce Tyrolienne, a flavorful sauce perfect for fried fish, featuring mayonnaise, capers, parsley, gherkin, and a concentrated tomato reduction.

Ingredients

  • 0.75 cup Mayonnaise
  • 0.5 tablespoon Capers, finely chopped
  • 0.5 tablespoon Fresh parsley, finely chopped
  • 1 small Gherkin, finely chopped
  • 0.5 can (14.5 oz) Canned diced tomatoes
  • 1 teaspoon Olive oil (For cooking tomatoes)

Instructions

  1. 1Drain the canned diced tomatoes. Heat olive oil in a small saucepan over medium heat. Add the drained tomatoes and simmer, stirring occasionally, until the liquid has reduced and the tomatoes have thickened to about 2 tablespoons. This will take approximately 15-20 minutes. Let cool completely.
  2. 2In a medium bowl, combine the mayonnaise, finely chopped capers, finely chopped parsley, and finely chopped gherkin. Add the cooled, reduced tomatoes and stir well to combine.
  3. 3Serve immediately with any kind of fried fish, or chill for later use.
