Modern Sauce Tyrolienne
A modernized version of Sauce Tyrolienne, a flavorful sauce perfect for fried fish, featuring mayonnaise, capers, parsley, gherkin, and a concentrated tomato reduction.
Ingredients
- 0.75 cup Mayonnaise
- 0.5 tablespoon Capers, finely chopped
- 0.5 tablespoon Fresh parsley, finely chopped
- 1 small Gherkin, finely chopped
- 0.5 can (14.5 oz) Canned diced tomatoes
- 1 teaspoon Olive oil (For cooking tomatoes)
Instructions
- 1Drain the canned diced tomatoes. Heat olive oil in a small saucepan over medium heat. Add the drained tomatoes and simmer, stirring occasionally, until the liquid has reduced and the tomatoes have thickened to about 2 tablespoons. This will take approximately 15-20 minutes. Let cool completely.
- 2In a medium bowl, combine the mayonnaise, finely chopped capers, finely chopped parsley, and finely chopped gherkin. Add the cooled, reduced tomatoes and stir well to combine.
- 3Serve immediately with any kind of fried fish, or chill for later use.
