Modern Sardine Canapés

A modernized version of sardine canapés, featuring a creamy sardine spread on toasted bread, topped with a stuffed olive and a decorative border.

Ingredients

  • 1 can (4.37 oz) Canned sardines in olive oil (Drained)
  • 6 slices Baguette or similar bread (About 1/2 inch thick)
  • 2 tablespoons Unsalted butter (Softened)
  • 1 teaspoon Worcestershire sauce
  • 1 pinch Cayenne pepper
  • 6 olives Green olives, pimento-stuffed
  • 1 sprig Fresh parsley (Finely chopped, for garnish)

Instructions

  1. 1Drain the sardines from the olive oil. Remove any visible bones. Place the sardines in a small bowl.
  2. 2Using a fork, mash the sardines into a smooth paste. Add the softened butter, Worcestershire sauce, and cayenne pepper. Mix well until everything is fully combined and creamy.
  3. 3Toast the baguette slices until golden brown. Let cool slightly.
  4. 4Spread the sardine mixture evenly onto each toasted bread slice. Remove the pimento from the olives. Fill the cavity of each olive with a small amount of the sardine mixture. Place a stuffed olive in the center of each canapé. Garnish with finely chopped fresh parsley.
