Ingredients
- 1 pound Salsify (Oyster Plant) (About 4-5 medium roots)
- 2 tablespoons Butter (Divided)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black Pepper (Freshly ground, or to taste)
- 0.5 cup All-Purpose Flour (For dredging)
- 2 tablespoons Olive Oil (For sautéing, or as needed)
- 0.5 cup Milk (Optional, for creamier texture)
Instructions
- 1Wash and peel the salsify roots. Cut into 1-inch pieces.
- 2Boil the salsify in salted water until tender, about 15-20 minutes. Drain well.
- 3Mash the cooked salsify with 1 tablespoon of butter, salt, and pepper. Add milk for a creamier texture, if desired.
- 4Shape the mashed salsify into small, flat cakes (about 2-3 inches in diameter). Roll each cake in flour, ensuring they are evenly coated.
- 5Heat olive oil and the remaining 1 tablespoon of butter in a large skillet over medium heat. Sauté the fritters until golden brown and crispy on both sides, about 3-4 minutes per side. Serve immediately.
