Modern Rye Muffins

A modernized version of a classic rye muffin recipe, incorporating molasses for sweetness and a touch of butter for richness.

Ingredients

  • 1.25 cups Rye meal
  • 1.25 cups All-purpose flour
  • 4 teaspoons Baking powder
  • 1 teaspoon Salt
  • 0.25 cup Molasses
  • 1.25 cups Milk
  • 1 Egg
  • 1 tablespoon Melted butter

Instructions

  1. 1Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  2. 2In a large bowl, whisk together the rye meal, flour, baking powder, and salt.
  3. 3In a separate bowl, whisk together the molasses, milk, egg, and melted butter.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. 6Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. 7Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
