Modern Rye Gems
A modernized version of Rye Gems, a type of quick bread muffin, incorporating updated techniques and measurements for a delicious and easy-to-make treat.
Ingredients
- 1.67 cups Rye Flour
- 1.33 cups All-Purpose Flour
- 4 teaspoons Baking Powder
- 1 teaspoon Salt
- 0.25 cup Molasses
- 1.25 cups Milk
- 2 Large Eggs
- 3 tablespoons Melted Butter
Instructions
- 1Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with butter or cooking spray.
- 2In a large bowl, whisk together the rye flour, all-purpose flour, baking powder, and salt.
- 3In a separate bowl, whisk together the molasses, milk, and eggs until well combined. Stir in the melted butter.
- 4Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- 6Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- 7Let the gems cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
