Modern Rye Gems

A modernized version of Rye Gems, a type of quick bread muffin, incorporating updated techniques and measurements for a delicious and easy-to-make treat.

Ingredients

  • 1.67 cups Rye Flour
  • 1.33 cups All-Purpose Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 0.25 cup Molasses
  • 1.25 cups Milk
  • 2 Large Eggs
  • 3 tablespoons Melted Butter

Instructions

  1. 1Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with butter or cooking spray.
  2. 2In a large bowl, whisk together the rye flour, all-purpose flour, baking powder, and salt.
  3. 3In a separate bowl, whisk together the molasses, milk, and eggs until well combined. Stir in the melted butter.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. 6Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Let the gems cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
