Ingredients: 8 slices Thinly sliced white bread (Zephyrettes are similar to thin white bread slices.); 4 oz Neufchâtel cheese (Softened); 1 cup Green olives (Finely chopped); 2 tablespoons Mayonnaise (For moistening the olives)

A modernized version of Russian Sandwiches, featuring creamy cheese, flavorful olives, and a tangy mayonnaise dressing, all pressed between delicate bread slices.

Ingredients

8 slices Thinly sliced white bread (Zephyrettes are similar to thin white bread slices.)
4 oz Neufchâtel cheese (Softened)
1 cup Green olives (Finely chopped)
2 tablespoons Mayonnaise (For moistening the olives)

Instructions

1Soften the Neufchâtel cheese to room temperature for easier spreading.
2Finely chop the green olives. In a small bowl, combine the chopped olives with mayonnaise until moistened.
3Spread a thin layer of softened Neufchâtel cheese on four slices of bread. Top the cheese with the moistened olive mixture. Place another slice of bread over each sandwich and gently press together.
