Modern Russian Jelly

A refreshing and elegant dessert made with gelatin, wine, and citrus juices. This modernized version of Russian Jelly is easy to make and perfect for any occasion.

Ingredients

  • 1 tablespoon Unflavored Gelatin (Equivalent to about 1/4 box of powdered gelatin)
  • 0.25 cup Cold Water
  • 1 cup Boiling Water
  • 0.6666666666666666 cup Granulated Sugar
  • 0.5 cup Sauterne Wine
  • 0.25 cup Orange Juice
  • 1.5 tablespoons Lemon Juice

Instructions

  1. 1In a small bowl, sprinkle the gelatin over the cold water. Let it stand for 5 minutes to soften (bloom).
  2. 2Add the boiling water to the bloomed gelatin and stir until the gelatin is completely dissolved. Add the sugar and stir until dissolved.
  3. 3Stir in the Sauterne wine, orange juice, and lemon juice.
  4. 4Let the mixture cool slightly (about 10-15 minutes). Once slightly cooled, beat with an electric mixer or whisk until frothy and thick enough to hold its shape when spooned. This may take 3-5 minutes.
  5. 5Pour the frothy jelly into a mold or individual serving glasses. Chill in the refrigerator for at least 3 hours, or until firm.
  6. 6For a fun presentation, fill glasses three-fourths full with the jelly mixture before it sets. Reserve one-fourth of the mixture. After the reserved mixture cools slightly, beat it until frothy using an electric mixer or whisk. Once the jelly in the glasses is partially set, spoon the frothy mixture on top to resemble the foam on lager beer. Chill until fully set.
