Modern Rice Waffles
Fluffy and delicious waffles made with cooked rice for a unique texture. Perfect for breakfast or brunch.
Ingredients
- 1.75 cups All-purpose flour
- 0.66 cup Cold cooked rice
- 1.5 cups Milk
- 2 tablespoons Granulated sugar
- 4 teaspoons Baking powder
- 0.25 teaspoon Salt
- 1 tablespoon Melted butter
- 1 Egg
Instructions
- 1In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 2Using your fingertips, gently work the cold cooked rice into the dry ingredients until evenly distributed. Some small clumps are okay.
- 3In a separate bowl, whisk together the milk, melted butter, and egg yolk until well combined.
- 4In another clean, dry bowl, beat the egg white until stiff peaks form. This can be done with a whisk or an electric mixer.
- 5Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix. Gently fold in the beaten egg white until just incorporated. Some streaks of egg white are okay.
- 6Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the waffle iron. Pour the batter onto the hot waffle iron and cook until golden brown and crispy, about 3-5 minutes per waffle.
- 7Serve immediately with your favorite toppings, such as syrup, fruit, or whipped cream.
