Modern Raised Muffins
A simple recipe for light and fluffy raised muffins, updated with modern techniques.
Ingredients
- 1 cup Milk (Scalded)
- 2 cups All-purpose flour
- 1 tablespoon Granulated sugar
- 0.5 teaspoon Salt
- 1.25 teaspoon Active dry yeast
- 2 tablespoons Unsalted butter (Melted)
- 1 Egg (Large)
Instructions
- 1In a saucepan, heat the milk until it just begins to simmer. Remove from heat and let cool slightly until lukewarm (about 110-115°F).
- 2In a large bowl, whisk together the flour, sugar, salt, and yeast.
- 3Add the lukewarm milk, melted butter, and egg to the dry ingredients. Stir until just combined. Do not overmix; a few lumps are okay.
- 4Line a muffin tin with paper liners or grease well. Fill each muffin cup about 2/3 full.
- 5Bake in a preheated oven at 400°F (200°C) for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- 6Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
