Modern Raised Hominy Muffins

A modernized version of raised hominy muffins, perfect for a simple and satisfying breakfast or side dish.

Ingredients

  • 1 cup Cooked Hominy (Warm)
  • 0.25 cup Unsalted Butter (Softened)
  • 1 cup Milk (Scalded)
  • 3 tablespoons Granulated Sugar
  • 0.5 teaspoon Salt
  • 2.25 teaspoon Active Dry Yeast
  • 2.5 cups All-Purpose Flour
  • 1 Large Egg (Lightly beaten)

Instructions

  1. 1In a small bowl, dissolve the active dry yeast in 1/4 cup of the scalded milk. Let stand for 5-10 minutes, or until foamy.
  2. 2In a large bowl, combine the warm cooked hominy, softened butter, remaining scalded milk, sugar, and salt. Mix well until the butter is melted and the mixture is smooth.
  3. 3Add the yeast mixture and the lightly beaten egg to the hominy mixture. Stir to combine.
  4. 4Gradually add the flour to the wet ingredients, mixing until just combined. Do not overmix.
  5. 5Grease or line a 12-cup muffin tin. Fill each muffin cup about 2/3 full with the batter.
  6. 6Cover the muffin tin with a clean kitchen towel and let rise in a warm place for about 20-30 minutes, or until the muffins have nearly doubled in size.
  7. 7Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. 8Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
