Modern Raised Hominy Muffins
A modernized version of raised hominy muffins, perfect for a simple and satisfying breakfast or side dish.
Ingredients
- 1 cup Cooked Hominy (Warm)
- 0.25 cup Unsalted Butter (Softened)
- 1 cup Milk (Scalded)
- 3 tablespoons Granulated Sugar
- 0.5 teaspoon Salt
- 2.25 teaspoon Active Dry Yeast
- 2.5 cups All-Purpose Flour
- 1 Large Egg (Lightly beaten)
Instructions
- 1In a small bowl, dissolve the active dry yeast in 1/4 cup of the scalded milk. Let stand for 5-10 minutes, or until foamy.
- 2In a large bowl, combine the warm cooked hominy, softened butter, remaining scalded milk, sugar, and salt. Mix well until the butter is melted and the mixture is smooth.
- 3Add the yeast mixture and the lightly beaten egg to the hominy mixture. Stir to combine.
- 4Gradually add the flour to the wet ingredients, mixing until just combined. Do not overmix.
- 5Grease or line a 12-cup muffin tin. Fill each muffin cup about 2/3 full with the batter.
- 6Cover the muffin tin with a clean kitchen towel and let rise in a warm place for about 20-30 minutes, or until the muffins have nearly doubled in size.
- 7Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- 8Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
