Modern Popovers
Light and airy popovers, perfect for breakfast or as a side dish. This recipe incorporates the simple water ratio from the referenced recipe.
Ingredients
- 3 Large Eggs
- 1 cup Milk
- 0.5 cup Water (Following the water ratio from recipe 5)
- 1 cup All-Purpose Flour
- 0.5 teaspoon Salt
- 2 tablespoons Melted Butter
Instructions
- 1Preheat oven to 450°F (232°C). Grease a popover pan or muffin tin very well with butter or cooking spray. Place the pan in the oven while it preheats.
- 2In a large bowl, whisk together the eggs, milk, and water until well combined.
- 3In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay. Stir in the melted butter.
- 4Carefully remove the hot pan from the oven. Fill each popover cup about 2/3 full with batter. Bake for 15 minutes at 450°F (232°C), then reduce the oven temperature to 350°F (175°C) and bake for another 15 minutes, or until the popovers are golden brown and puffed up. Do not open the oven door during baking!
- 5Remove the popovers from the pan and serve immediately. They are best enjoyed warm.
