Modern Popovers

Light and airy popovers, perfect for breakfast or as a side dish. This recipe incorporates the simple water ratio from the referenced recipe.

Ingredients

  • 3 Large Eggs
  • 1 cup Milk
  • 0.5 cup Water (Following the water ratio from recipe 5)
  • 1 cup All-Purpose Flour
  • 0.5 teaspoon Salt
  • 2 tablespoons Melted Butter

Instructions

  1. 1Preheat oven to 450°F (232°C). Grease a popover pan or muffin tin very well with butter or cooking spray. Place the pan in the oven while it preheats.
  2. 2In a large bowl, whisk together the eggs, milk, and water until well combined.
  3. 3In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay. Stir in the melted butter.
  4. 4Carefully remove the hot pan from the oven. Fill each popover cup about 2/3 full with batter. Bake for 15 minutes at 450°F (232°C), then reduce the oven temperature to 350°F (175°C) and bake for another 15 minutes, or until the popovers are golden brown and puffed up. Do not open the oven door during baking!
  5. 5Remove the popovers from the pan and serve immediately. They are best enjoyed warm.
