Modern Oyster Rarebit

A modernized version of Oyster Rarebit, featuring a creamy cheese sauce with oysters served over toasted bread.

Ingredients

  • 1 cup Fresh oysters (Shucked, with liquor reserved)
  • 2 tablespoons Butter
  • 4 oz Sharp cheddar cheese (Shredded)
  • 0.25 teaspoon Salt
  • 0.0625 teaspoon Cayenne pepper (Pinch)
  • 2 Eggs (Lightly beaten)
  • 2 Bread slices (For toasting)

Instructions

  1. 1Clean the oysters by rinsing them gently under cold water. Parboil the oysters in their own liquor for about 1 minute. Drain the oysters, reserving the liquor. Remove and discard the tough muscle from each oyster.
  2. 2In a saucepan, melt the butter over low heat. Add the shredded cheddar cheese, salt, and cayenne pepper. Stir continuously until the cheese begins to melt. Gradually add the reserved oyster liquor, stirring constantly to create a smooth sauce. Slowly pour in the lightly beaten eggs, continuing to stir until the sauce is smooth and thickened.
  3. 3Gently fold in the softened oysters into the cheese sauce. Toast the bread slices on one side. Pour the oyster rarebit over the untoasted side of the toast and serve immediately.
