Modern One Egg Muffins
A simple and quick recipe for making muffins using just one egg. This recipe is scaled down for a smaller batch, perfect for a quick breakfast or snack.
Ingredients
- 1.75 cups All-purpose flour
- 3 teaspoons Baking powder
- 0.5 teaspoon Salt
- 0.66 cup Milk
- 1.5 tablespoons Melted butter
- 1 Egg
- 1.5 tablespoons Sugar
Instructions
- 1Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
- 2In a large bowl, whisk together the flour, baking powder, and salt.
- 3In a separate bowl, whisk together the milk, melted butter, egg, and sugar.
- 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- 6Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- 7Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
