Modern One Egg Muffins

A simple and quick recipe for making muffins using just one egg. This recipe is scaled down for a smaller batch, perfect for a quick breakfast or snack.

Ingredients

  • 1.75 cups All-purpose flour
  • 3 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.66 cup Milk
  • 1.5 tablespoons Melted butter
  • 1 Egg
  • 1.5 tablespoons Sugar

Instructions

  1. 1Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  2. 2In a large bowl, whisk together the flour, baking powder, and salt.
  3. 3In a separate bowl, whisk together the milk, melted butter, egg, and sugar.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. 6Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
