Modern Norwegian Prune Pudding
A modernized version of Norwegian Prune Pudding, a simple and comforting dessert. This recipe uses a blend of spices and a touch of citrus to enhance the prune flavor.
Ingredients
- 250 g Pitted Prunes (About 1 cup)
- 4 cups Water
- 0.5 cup Granulated Sugar
- 1 stick Cinnamon Stick
- 1 tsp Lemon Zest
- 2 tbsp Cornstarch (Mixed with 1/4 cup cold water)
Instructions
- 1In a medium saucepan, combine the prunes and water. Let them soak for at least 30 minutes to soften.
- 2Add the sugar, cinnamon stick, and lemon zest to the saucepan. Bring the mixture to a simmer over medium heat. Reduce the heat to low, cover, and simmer for 30 minutes, or until the prunes are very soft.
- 3In a small bowl, whisk together the cornstarch and cold water until smooth. Gradually pour the cornstarch slurry into the simmering prune mixture, stirring constantly to prevent lumps. Continue to cook and stir until the pudding thickens, about 2-3 minutes.
