Modern Mock Mince Pie
A modernized version of a mock mince pie, using readily available ingredients and updated techniques for a delicious and easy dessert.
Ingredients
- 8 whole Saltine crackers (Finely crushed (about 1 cup))
- 1.5 cups Granulated sugar
- 1 cup Molasses
- 0.33 cup Lemon juice
- 1 cup Raisins (Seeded and chopped)
- 0.5 cup Unsalted butter (Melted)
- 2 large Large eggs (Well beaten)
- 0.5 teaspoon Ground cinnamon
- 0.25 teaspoon Ground nutmeg
- 1 single Prepared pie crust (9-inch)
Instructions
- 1Preheat oven to 350°F (175°C). Place the prepared pie crust in a 9-inch pie plate.
- 2In a large bowl, combine the crushed saltine crackers, sugar, cinnamon, and nutmeg.
- 3Add the molasses, lemon juice, melted butter, raisins, and beaten eggs to the bowl. Mix well until all ingredients are thoroughly combined.
- 4Pour the mixture into the prepared pie crust.
- 5Bake in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown. Let cool completely before serving.
