Modern Mock Mince Pie

A modernized version of a mock mince pie, using readily available ingredients and updated techniques for a delicious and easy dessert.

Ingredients

  • 8 whole Saltine crackers (Finely crushed (about 1 cup))
  • 1.5 cups Granulated sugar
  • 1 cup Molasses
  • 0.33 cup Lemon juice
  • 1 cup Raisins (Seeded and chopped)
  • 0.5 cup Unsalted butter (Melted)
  • 2 large Large eggs (Well beaten)
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 single Prepared pie crust (9-inch)

Instructions

  1. 1Preheat oven to 350°F (175°C). Place the prepared pie crust in a 9-inch pie plate.
  2. 2In a large bowl, combine the crushed saltine crackers, sugar, cinnamon, and nutmeg.
  3. 3Add the molasses, lemon juice, melted butter, raisins, and beaten eggs to the bowl. Mix well until all ingredients are thoroughly combined.
  4. 4Pour the mixture into the prepared pie crust.
  5. 5Bake in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown. Let cool completely before serving.
