Modern Marshmallow Paste
A classic marshmallow paste recipe, updated for modern kitchens. Perfect for frosting cakes or filling pastries.
Ingredients
- 0.75 cup Granulated Sugar
- 0.25 cup Milk
- 4 oz Marshmallows
- 2 tablespoons Hot Water
- 0.5 teaspoon Vanilla Extract
Instructions
- 1In a medium saucepan, combine the sugar and milk.
- 2Heat the sugar and milk mixture slowly over medium heat until it reaches a boil. Do not stir. Once boiling, continue to boil for 6 minutes.
- 3While the sugar syrup is boiling, break the marshmallows into pieces and place them in a double boiler or a heatproof bowl set over a simmering pot of water. Add the hot water to the marshmallows. Cook, stirring occasionally, until the marshmallows are completely melted and the mixture is smooth.
- 4Gradually add the hot sugar syrup to the melted marshmallow mixture, stirring constantly to prevent lumps from forming.
- 5Beat the mixture with an electric mixer or by hand until it is cool enough to spread. This will take several minutes.
- 6Stir in the vanilla extract.
