Modern Marshmallow Paste

A classic marshmallow paste recipe, updated for modern kitchens. Perfect for frosting cakes or filling pastries.

Ingredients

  • 0.75 cup Granulated Sugar
  • 0.25 cup Milk
  • 4 oz Marshmallows
  • 2 tablespoons Hot Water
  • 0.5 teaspoon Vanilla Extract

Instructions

  1. 1In a medium saucepan, combine the sugar and milk.
  2. 2Heat the sugar and milk mixture slowly over medium heat until it reaches a boil. Do not stir. Once boiling, continue to boil for 6 minutes.
  3. 3While the sugar syrup is boiling, break the marshmallows into pieces and place them in a double boiler or a heatproof bowl set over a simmering pot of water. Add the hot water to the marshmallows. Cook, stirring occasionally, until the marshmallows are completely melted and the mixture is smooth.
  4. 4Gradually add the hot sugar syrup to the melted marshmallow mixture, stirring constantly to prevent lumps from forming.
  5. 5Beat the mixture with an electric mixer or by hand until it is cool enough to spread. This will take several minutes.
  6. 6Stir in the vanilla extract.
