Modern Lemon Pie

A modernized version of a classic lemon pie, featuring a flaky crust and a tangy, sweet filling.

Ingredients

  • 1 double crust Prepared Pie Crust (Or make your own from scratch)
  • 1 medium Apple, finely chopped (About 1/2 cup chopped)
  • 1 cup Granulated Sugar
  • 1 Large Egg (Lightly beaten)
  • 1 cup Cracker Crumbs (Use Ritz or similar buttery crackers)
  • 1.5 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Melted Butter

Instructions

  1. 1Preheat oven to 375°F (190°C). Place one pie crust in a 9-inch pie plate. Crimp the edges.
  2. 2In a large bowl, combine the chopped apple, sugar, beaten egg, cracker crumbs, lemon juice, lemon zest, and melted butter. Mix well until all ingredients are thoroughly combined.
  3. 3Pour the lemon filling into the prepared pie crust, spreading evenly.
  4. 4Cover with the second pie crust. Cut slits in the top crust to allow steam to escape. Crimp the edges to seal. Bake for 35-40 minutes, or until the crust is golden brown and the filling is set.
  5. 5Let the pie cool completely on a wire rack before serving. This allows the filling to set properly.
