Modern Lemon Pie
A modernized version of a classic lemon pie, featuring a flaky crust and a tangy, sweet filling.
Ingredients
- 1 double crust Prepared Pie Crust (Or make your own from scratch)
- 1 medium Apple, finely chopped (About 1/2 cup chopped)
- 1 cup Granulated Sugar
- 1 Large Egg (Lightly beaten)
- 1 cup Cracker Crumbs (Use Ritz or similar buttery crackers)
- 1.5 tablespoons Lemon Juice
- 1 teaspoon Lemon Zest
- 1 tablespoon Melted Butter
Instructions
- 1Preheat oven to 375°F (190°C). Place one pie crust in a 9-inch pie plate. Crimp the edges.
- 2In a large bowl, combine the chopped apple, sugar, beaten egg, cracker crumbs, lemon juice, lemon zest, and melted butter. Mix well until all ingredients are thoroughly combined.
- 3Pour the lemon filling into the prepared pie crust, spreading evenly.
- 4Cover with the second pie crust. Cut slits in the top crust to allow steam to escape. Crimp the edges to seal. Bake for 35-40 minutes, or until the crust is golden brown and the filling is set.
- 5Let the pie cool completely on a wire rack before serving. This allows the filling to set properly.
