Modern Indian Pudding
A modernized version of classic Indian Pudding, a baked custard-like dessert made with cornmeal, molasses, and spices.
Ingredients
- 4 cups Milk
- 0.33 cup Yellow Cornmeal
- 0.5 cup Molasses
- 1 teaspoon Salt
- 1 teaspoon Ground Ginger
- 1 tablespoon Butter (For greasing the dish)
- 0.5 cup Heavy Cream (For serving)
Instructions
- 1In a saucepan, heat the milk over medium heat until it is steaming and small bubbles form around the edges. Do not boil.
- 2Slowly pour the scalded milk over the cornmeal in a heatproof bowl, whisking constantly to prevent lumps.
- 3Pour the mixture into the top of a double boiler. Cook over simmering water for 20 minutes, stirring occasionally to prevent sticking.
- 4Remove from heat and stir in the molasses, salt, and ginger until well combined.
- 5Preheat oven to 325°F (160°C). Grease a 9-inch baking dish with butter. Pour the pudding mixture into the prepared dish and bake for 2 hours, or until set. A knife inserted near the center should come out clean.
- 6Let the pudding cool slightly before serving. Serve warm with a dollop of heavy cream.
