Modern Indian Pudding

A modernized version of classic Indian Pudding, a baked custard-like dessert made with cornmeal, molasses, and spices.

Ingredients

  • 4 cups Milk
  • 0.33 cup Yellow Cornmeal
  • 0.5 cup Molasses
  • 1 teaspoon Salt
  • 1 teaspoon Ground Ginger
  • 1 tablespoon Butter (For greasing the dish)
  • 0.5 cup Heavy Cream (For serving)

Instructions

  1. 1In a saucepan, heat the milk over medium heat until it is steaming and small bubbles form around the edges. Do not boil.
  2. 2Slowly pour the scalded milk over the cornmeal in a heatproof bowl, whisking constantly to prevent lumps.
  3. 3Pour the mixture into the top of a double boiler. Cook over simmering water for 20 minutes, stirring occasionally to prevent sticking.
  4. 4Remove from heat and stir in the molasses, salt, and ginger until well combined.
  5. 5Preheat oven to 325°F (160°C). Grease a 9-inch baking dish with butter. Pour the pudding mixture into the prepared dish and bake for 2 hours, or until set. A knife inserted near the center should come out clean.
  6. 6Let the pudding cool slightly before serving. Serve warm with a dollop of heavy cream.
