Modern Ice Cream Frosting

A simple and delicious frosting made with sugar, water, egg whites, and vanilla extract. This recipe is inspired by classic techniques and updated for modern kitchens.

Ingredients

  • 2 cups Granulated Sugar
  • 6 tablespoons Water
  • 2 Egg Whites (Large eggs)
  • 0.5 teaspoon Vanilla Extract

Instructions

  1. 1In a saucepan, combine the sugar and water.
  2. 2Cook over medium heat, stirring constantly, until the sugar is dissolved. Continue cooking, without stirring, until the mixture reaches the soft ball stage (235-240°F or 112-115°C). Use a candy thermometer to ensure accuracy.
  3. 3While the sugar mixture is cooking, beat the egg whites in a clean, dry bowl until stiff peaks form.
  4. 4Slowly pour the hot sugar syrup into the beaten egg whites in a thin stream, while continuing to beat on high speed. Be careful, as the syrup is very hot.
  5. 5Continue beating the mixture until it is thick, glossy, and completely cool. This may take several minutes.
  6. 6Stir in the vanilla extract.
