Modern Ice Cream Frosting
A simple and delicious frosting made with sugar, water, egg whites, and vanilla extract. This recipe is inspired by classic techniques and updated for modern kitchens.
Ingredients
- 2 cups Granulated Sugar
- 6 tablespoons Water
- 2 Egg Whites (Large eggs)
- 0.5 teaspoon Vanilla Extract
Instructions
- 1In a saucepan, combine the sugar and water.
- 2Cook over medium heat, stirring constantly, until the sugar is dissolved. Continue cooking, without stirring, until the mixture reaches the soft ball stage (235-240°F or 112-115°C). Use a candy thermometer to ensure accuracy.
- 3While the sugar mixture is cooking, beat the egg whites in a clean, dry bowl until stiff peaks form.
- 4Slowly pour the hot sugar syrup into the beaten egg whites in a thin stream, while continuing to beat on high speed. Be careful, as the syrup is very hot.
- 5Continue beating the mixture until it is thick, glossy, and completely cool. This may take several minutes.
- 6Stir in the vanilla extract.
