Modern Fruit Sandwiches
A modernized take on classic fruit sandwiches, featuring a fig paste and peanut filling between slices of bread.
Ingredients
- 1 cup Dried Figs (Stemmed and finely chopped)
- 0.25 cup Water (For cooking the figs)
- 1 teaspoon Lemon Juice
- 12 slices Bread (Thin slices, white or brown bread)
- 4 tablespoons Butter (Softened)
- 0.5 cup Peanuts (Finely chopped, unsalted)
- 0.125 teaspoon Salt (Pinch of salt for peanuts)
Instructions
- 1Remove stems from figs and finely chop them. Place the chopped figs and water in a double boiler or a heatproof bowl set over a simmering pot of water. Cook, stirring occasionally, until the figs soften and form a paste.
- 2Remove the fig paste from the heat and stir in the lemon juice. Allow the mixture to cool completely.
- 3Finely chop the peanuts and mix them with a pinch of salt.
- 4Spread butter on each slice of bread. Spread the cooled fig paste on half of the bread slices. Sprinkle the chopped peanuts evenly over the fig paste. Top with the remaining buttered bread slices.
- 5Cut the sandwiches into desired shapes (triangles or rectangles) and serve immediately. Referencing Sandwiches, 552 and Sandwiches, 550, the sandwiches can be cut as for other sandwiches.
