Modern Fig Filling

A simple and delicious fig filling, perfect for pastries, tarts, or as a spread.

Ingredients

  • 250 grams Dried Figs (About 1/2 lb, finely chopped)
  • 65 grams Granulated Sugar (About 1/3 cup)
  • 60 ml Water (About 1/4 cup)
  • 1 teaspoon Lemon Juice (Optional, for brightness)

Instructions

  1. 1Finely chop the dried figs.
  2. 2In a saucepan, combine the chopped figs, sugar, and water. Add lemon juice if using.
  3. 3Bring the mixture to a simmer over medium heat. Reduce heat to low and simmer for 15-20 minutes, or until the figs are softened and the mixture has thickened, stirring occasionally. As per recipe 5, simmer for 10 minutes without stirring, then stir occasionally.
  4. 4Remove from heat and let cool completely before using. The filling will thicken further as it cools.
