Modern English Monkey

A modernized version of English Monkey, a savory cheese and breadcrumb dish served over toast.

Ingredients

  • 1 cup Stale bread crumbs (Use day-old bread, pulsed in a food processor.)
  • 1 cup Milk
  • 1 tablespoon Butter
  • 0.5 cup Mild cheddar cheese (Shredded or cut into small pieces)
  • 1 Egg (Large)
  • 0.5 teaspoon Salt
  • 0.125 teaspoon Cayenne pepper (Pinch)
  • 4 Crackers (Saltines or similar)
  • 1 tablespoon Butter (For spreading on crackers)

Instructions

  1. 1In a bowl, combine the stale bread crumbs and milk. Let soak for 15 minutes, until the bread crumbs are softened.
  2. 2In a saucepan over medium heat, melt the butter. Add the shredded cheddar cheese and stir until the cheese is melted and smooth.
  3. 3Add the soaked bread crumbs to the melted cheese mixture. Stir in the egg (slightly beaten), salt, and cayenne pepper. Cook for 3 minutes, stirring constantly, until the mixture is heated through and slightly thickened.
  4. 4Spread the crackers sparingly with butter.
  5. 5Pour the cheese mixture over the buttered crackers and serve immediately.
