Modern English Monkey
A modernized version of English Monkey, a savory cheese and breadcrumb dish served over toast.
Ingredients
- 1 cup Stale bread crumbs (Use day-old bread, pulsed in a food processor.)
- 1 cup Milk
- 1 tablespoon Butter
- 0.5 cup Mild cheddar cheese (Shredded or cut into small pieces)
- 1 Egg (Large)
- 0.5 teaspoon Salt
- 0.125 teaspoon Cayenne pepper (Pinch)
- 4 Crackers (Saltines or similar)
- 1 tablespoon Butter (For spreading on crackers)
Instructions
- 1In a bowl, combine the stale bread crumbs and milk. Let soak for 15 minutes, until the bread crumbs are softened.
- 2In a saucepan over medium heat, melt the butter. Add the shredded cheddar cheese and stir until the cheese is melted and smooth.
- 3Add the soaked bread crumbs to the melted cheese mixture. Stir in the egg (slightly beaten), salt, and cayenne pepper. Cook for 3 minutes, stirring constantly, until the mixture is heated through and slightly thickened.
- 4Spread the crackers sparingly with butter.
- 5Pour the cheese mixture over the buttered crackers and serve immediately.
