Modern Date Pie

A modernized version of a classic date pie, featuring a creamy date filling with a hint of nutmeg, baked in a flaky pie crust.

Ingredients

  • 1 cup Medjool Dates, pitted (About 8 ounces)
  • 2 cups Whole Milk
  • 0.5 cup Granulated Sugar
  • 2 Large Eggs
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Ground Nutmeg
  • 1 Prepared Pie Crust (9-inch)

Instructions

  1. 1In a saucepan, combine the dates and milk. Cook over medium heat for 20 minutes, stirring occasionally, until the dates are softened.
  2. 2Strain the date and milk mixture through a fine-mesh sieve into a bowl. Use a spoon or spatula to press the dates against the sieve, extracting as much of the date pulp as possible. Discard any remaining solids.
  3. 3In the bowl with the pureed date mixture, add the sugar, eggs, salt, and nutmeg. Whisk until well combined.
  4. 4Pour the date filling into the prepared pie crust. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes, or until the filling is set and the crust is golden brown. A knife inserted into the center should come out clean.
  5. 5Let the pie cool completely on a wire rack before serving. This allows the filling to set fully.
