Modern Date Pie
A modernized version of a classic date pie, featuring a creamy date filling with a hint of nutmeg, baked in a flaky pie crust.
Ingredients
- 1 cup Medjool Dates, pitted (About 8 ounces)
- 2 cups Whole Milk
- 0.5 cup Granulated Sugar
- 2 Large Eggs
- 0.25 teaspoon Salt
- 0.125 teaspoon Ground Nutmeg
- 1 Prepared Pie Crust (9-inch)
Instructions
- 1In a saucepan, combine the dates and milk. Cook over medium heat for 20 minutes, stirring occasionally, until the dates are softened.
- 2Strain the date and milk mixture through a fine-mesh sieve into a bowl. Use a spoon or spatula to press the dates against the sieve, extracting as much of the date pulp as possible. Discard any remaining solids.
- 3In the bowl with the pureed date mixture, add the sugar, eggs, salt, and nutmeg. Whisk until well combined.
- 4Pour the date filling into the prepared pie crust. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes, or until the filling is set and the crust is golden brown. A knife inserted into the center should come out clean.
- 5Let the pie cool completely on a wire rack before serving. This allows the filling to set fully.
