Modern Dandelion Greens
A simple and slightly bitter green, dandelions can be a delicious and nutritious addition to your diet. This recipe modernizes a classic preparation.
Ingredients
- 1 pound Dandelion greens (About 1 peck in original recipe)
- 2 quarts Water
- 1 teaspoon Salt
- 2 tablespoons Butter
- 0.25 teaspoon Black pepper
- 1 tablespoon Vinegar (Optional, for serving)
Instructions
- 1Wash the dandelion greens thoroughly under cold running water to remove any dirt or debris. Remove the roots.
- 2Bring 2 quarts of salted water to a boil in a large pot. Add the dandelion greens and cook for 1 hour, or until tender. Drain well.
- 3In a bowl, toss the cooked dandelion greens with butter, salt, and pepper. Serve immediately with a splash of vinegar, if desired.
