Modern Currant Pie

A classic currant pie with a flaky crust and sweet-tart filling, topped with a light and airy meringue.

Ingredients

  • 2 cups Currants (Fresh or dried)
  • 1 cup Granulated sugar
  • 0.25 cup All-purpose flour
  • 2 Egg yolks (Large eggs)
  • 2 tablespoons Water
  • 1 Pie crust (Single crust, store-bought or homemade)
  • 2 Egg whites (For meringue)
  • 0.5 cup Granulated sugar (For meringue)
  • 0.5 teaspoon Vanilla extract (For meringue)

Instructions

  1. 1If using dried currants, soak them in warm water for 15 minutes to plump them up. Drain well. If using fresh currants, wash and remove stems.
  2. 2In a medium bowl, mix together the sugar and flour. In a separate small bowl, lightly beat the egg yolks and dilute with water. Add the egg yolk mixture to the sugar and flour mixture and stir until well combined. Add the currants and mix well.
  3. 3Pour the currant filling into the pie crust. Bake in a preheated oven at 350°F (175°C) for 30-40 minutes, or until the crust is golden brown and the filling is set.
  4. 4While the pie is baking, prepare the meringue. In a clean, dry bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, beating until the meringue is glossy and smooth. Stir in the vanilla extract.
  5. 5Once the pie is baked, remove it from the oven and let it cool slightly. Spread the meringue evenly over the top of the pie. Return the pie to the oven and bake for another 10-15 minutes, or until the meringue is lightly browned.
  6. 6Remove the pie from the oven and let it cool completely before serving. Enjoy!
