Modern Cole Slaw
A refreshing and crisp cole slaw made with thinly sliced cabbage and a creamy dressing.
Ingredients
- 1 medium head Green Cabbage (About 2 pounds)
- 1 large Carrot (Peeled and shredded)
- 1 cup Mayonnaise
- 2 tablespoons Apple Cider Vinegar
- 2 tablespoons Granulated Sugar
- 1 teaspoon Celery Seed
- 0.5 teaspoon Salt
- 0.25 teaspoon Black Pepper
Instructions
- 1Remove the outer leaves of the cabbage. Cut the cabbage into quarters. Using a sharp knife or a mandoline, slice the cabbage very thinly. Place the sliced cabbage in a large bowl filled with cold water and let it soak for 10 minutes to crisp up.
- 2Peel and shred the carrot. Add the shredded carrot to the bowl with the cabbage.
- 3In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, celery seed, salt, and black pepper until smooth.
- 4Drain the cabbage and carrot mixture thoroughly. You can use a salad spinner or pat them dry with paper towels. Pour the dressing over the cabbage and carrot mixture and toss to combine. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
