Modern Claret Consommé

A clarified broth infused with claret wine and cinnamon, perfect as a light starter or palate cleanser.

Ingredients

  • 4 cups Beef Broth (Use a high-quality, clear beef broth or consommé.)
  • 1.5 cups Claret Wine (A dry red wine, such as Bordeaux, can be substituted.)
  • 1 3-inch piece Cinnamon Stick
  • 1 tablespoon Sugar (Adjust to taste.)
  • 2 drops Red Food Coloring (Optional, for a deeper color.)
  • 1 teaspoon Gelatin (Optional, for a clearer consommé.)

Instructions

  1. 1If using gelatin, bloom it by sprinkling it over 2 tablespoons of cold water in a small bowl. Let it sit for 5 minutes to soften.
  2. 2In a saucepan, combine the claret wine, cinnamon stick, and sugar. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally to dissolve the sugar.
  3. 3Pour the infused claret mixture into the beef broth. Heat gently over low heat, being careful not to boil. If using bloomed gelatin, stir it into the broth until dissolved.
  4. 4Taste and adjust the sweetness with more sugar if needed. Add red food coloring, if desired, for a richer color. Serve warm in small cups or bowls.
