Modern Claret Consommé
A clarified broth infused with claret wine and cinnamon, perfect as a light starter or palate cleanser.
Ingredients
- 4 cups Beef Broth (Use a high-quality, clear beef broth or consommé.)
- 1.5 cups Claret Wine (A dry red wine, such as Bordeaux, can be substituted.)
- 1 3-inch piece Cinnamon Stick
- 1 tablespoon Sugar (Adjust to taste.)
- 2 drops Red Food Coloring (Optional, for a deeper color.)
- 1 teaspoon Gelatin (Optional, for a clearer consommé.)
Instructions
- 1If using gelatin, bloom it by sprinkling it over 2 tablespoons of cold water in a small bowl. Let it sit for 5 minutes to soften.
- 2In a saucepan, combine the claret wine, cinnamon stick, and sugar. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally to dissolve the sugar.
- 3Pour the infused claret mixture into the beef broth. Heat gently over low heat, being careful not to boil. If using bloomed gelatin, stir it into the broth until dissolved.
- 4Taste and adjust the sweetness with more sugar if needed. Add red food coloring, if desired, for a richer color. Serve warm in small cups or bowls.
