Modern Cheese Wafers and Canapés
A modernized version of classic cheese wafers and canapés, perfect as appetizers or snacks.
Ingredients
- 24 crackers Crackers (Zephyrettes or similar) (Original recipe calls for 'zephyrettes')
- 1 cup Sharp Cheddar Cheese, finely grated
- 0.25 teaspoon Cayenne Pepper
- 6 slices Bread slices (For canapés)
- 2 tablespoons Butter, melted (For canapés)
- 2 large Eggs, hard-boiled and chopped (For canapés)
- 0.25 cup Smoked Salmon, finely chopped (For canapés)
- 0.25 cup Cooked Ham, finely chopped (For canapés)
- 2 tablespoons Mayonnaise (For canapés)
- 0.5 teaspoon Dijon Mustard (For canapés)
- 1 tablespoon Fresh Dill, chopped (For canapés)
Instructions
- 1Preheat oven to 350°F (175°C). In a small bowl, combine the grated cheddar cheese and cayenne pepper.
- 2Sprinkle the cheese mixture evenly over the crackers.
- 3Place the crackers on a baking sheet and bake for 5-7 minutes, or until the cheese is melted and slightly bubbly.
- 4Cut bread slices into desired shapes (strips or circles). Toast, fry in deep fat, or butter and brown in the oven. For buttered and browned in the oven: Preheat oven to 350°F (175°C). Brush bread slices with melted butter and bake for 5-7 minutes, or until golden brown.
- 5In a bowl, combine hard-boiled eggs, smoked salmon, cooked ham, mayonnaise, Dijon mustard, and fresh dill. Mix well.
- 6Spread the seasoned mixture over the toasted or browned bread slices. Serve hot or cold.
