Modern Caramel Junket
A modernized version of Caramel Junket, a simple dessert. This recipe uses a rennet tablet to set the milk and sugar mixture into a delicate, caramel-flavored custard.
Ingredients
- 2 cups Whole milk (Use full-fat milk for the best flavor and set.)
- 0.33 cup Granulated sugar (Adjust to your desired sweetness.)
- 0.25 tablet Rennet tablet (Or liquid rennet equivalent. Follow package instructions.)
- 1 tablespoon Water (For dissolving the rennet tablet.)
- 0.5 teaspoon Vanilla extract (Optional, for added flavor.)
Instructions
- 1In a saucepan, heat the sugar over medium heat, stirring constantly, until it melts and turns into a golden caramel. Be careful not to burn it.
- 2Gently heat the milk in a separate saucepan until it is lukewarm. Do not boil.
- 3Dissolve the rennet tablet in 1 tablespoon of cold water.
- 4Pour the caramelized sugar into the lukewarm milk and stir gently to combine. Add vanilla extract if using. Then, add the dissolved rennet and stir very gently for a few seconds. Pour the mixture into individual serving dishes or a larger bowl. Let it sit at room temperature for at least 30 minutes, or until set. Refrigerate for at least 2 hours before serving.
