Modern Caramel Junket

A modernized version of Caramel Junket, a simple dessert. This recipe uses a rennet tablet to set the milk and sugar mixture into a delicate, caramel-flavored custard.

Ingredients

  • 2 cups Whole milk (Use full-fat milk for the best flavor and set.)
  • 0.33 cup Granulated sugar (Adjust to your desired sweetness.)
  • 0.25 tablet Rennet tablet (Or liquid rennet equivalent. Follow package instructions.)
  • 1 tablespoon Water (For dissolving the rennet tablet.)
  • 0.5 teaspoon Vanilla extract (Optional, for added flavor.)

Instructions

  1. 1In a saucepan, heat the sugar over medium heat, stirring constantly, until it melts and turns into a golden caramel. Be careful not to burn it.
  2. 2Gently heat the milk in a separate saucepan until it is lukewarm. Do not boil.
  3. 3Dissolve the rennet tablet in 1 tablespoon of cold water.
  4. 4Pour the caramelized sugar into the lukewarm milk and stir gently to combine. Add vanilla extract if using. Then, add the dissolved rennet and stir very gently for a few seconds. Pour the mixture into individual serving dishes or a larger bowl. Let it sit at room temperature for at least 30 minutes, or until set. Refrigerate for at least 2 hours before serving.
