Modern Butterscotch

A modern take on classic butterscotch candy, incorporating techniques for achieving a smooth and flavorful result.

Ingredients

  • 1 cup Granulated Sugar
  • 0.25 cup Molasses
  • 1 tablespoon White Vinegar
  • 4 tablespoons Unsalted Butter
  • 0.25 teaspoon Salt

Instructions

  1. 1Lightly grease a baking sheet or line it with parchment paper. This will prevent the butterscotch from sticking.
  2. 2In a heavy-bottomed saucepan, combine the sugar, molasses, butter, vinegar, and salt.
  3. 3Place the saucepan over medium heat and stir constantly until the sugar is dissolved and the butter is melted. Continue to cook, stirring frequently, until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes. Be careful not to burn the mixture.
  4. 4Once the mixture reaches the hard-crack stage, immediately pour it onto the prepared baking sheet. Let it cool completely without disturbing it. This will take about 10-15 minutes.
  5. 5Once the butterscotch is completely cool and hardened, break it into pieces. Store in an airtight container.
