Modern Butterscotch
A modern take on classic butterscotch candy, incorporating techniques for achieving a smooth and flavorful result.
Ingredients
- 1 cup Granulated Sugar
- 0.25 cup Molasses
- 1 tablespoon White Vinegar
- 4 tablespoons Unsalted Butter
- 0.25 teaspoon Salt
Instructions
- 1Lightly grease a baking sheet or line it with parchment paper. This will prevent the butterscotch from sticking.
- 2In a heavy-bottomed saucepan, combine the sugar, molasses, butter, vinegar, and salt.
- 3Place the saucepan over medium heat and stir constantly until the sugar is dissolved and the butter is melted. Continue to cook, stirring frequently, until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes. Be careful not to burn the mixture.
- 4Once the mixture reaches the hard-crack stage, immediately pour it onto the prepared baking sheet. Let it cool completely without disturbing it. This will take about 10-15 minutes.
- 5Once the butterscotch is completely cool and hardened, break it into pieces. Store in an airtight container.
