Ingredients

  • 1 cup Buckwheat Flour
  • 0.5 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.25 tsp Salt
  • 1 tbsp Sugar
  • 1 Egg
  • 1 cup Milk
  • 2 tbsp Melted Butter
  • 0.5 tsp Vanilla Extract (Optional, for added flavor)
  • 1 tbsp Coconut Butter (For greasing the pan, inspired by recipe 41)

Instructions

  1. 1In a large bowl, whisk together the buckwheat flour, all-purpose flour, baking powder, baking soda, salt, and sugar.
  2. 2In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract (if using).
  3. 3Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. 4Heat a lightly greased griddle or frying pan over medium heat. Use coconut butter (inspired by recipe 41) to grease the pan. Pour 1/4 cup of batter onto the hot griddle for each cake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. 5Serve the buckwheat cakes immediately with your favorite toppings, such as maple syrup, fruit, or whipped cream.
