Modern Broiled Chicken

A modernized version of a classic broiled chicken recipe, with options for oven-baking to ensure even cooking and prevent burning.

Ingredients

  • 1 3-4 lb Whole Chicken (Suitable for broiling)
  • 1 tsp Salt (Or to taste)
  • 0.5 tsp Black Pepper (Freshly ground, or to taste)
  • 2 tbsp Butter (Softened)
  • 1 tbsp Cooking Oil (For greasing the broiler pan)

Instructions

  1. 1Preheat broiler to high. Rinse the chicken inside and out and pat dry with paper towels. Remove any giblets. Lightly grease a broiler pan with cooking oil.
  2. 2Sprinkle the chicken generously with salt and pepper, both inside and out.
  3. 3Place the chicken on the prepared broiler pan, skin-side up. Position the broiler pan so that the chicken is about 6-8 inches from the heat source. Broil for 10 minutes, then turn the chicken and broil for another 10 minutes. Watch carefully to prevent burning, adjusting the broiler pan as needed.
  4. 4If the chicken is browning too quickly or you want to ensure it's cooked through, preheat oven to 375°F (190°C). Dot the chicken with butter and bake for 10-15 minutes, or until the internal temperature reaches 165°F (74°C). Then, return to the broiler for the last few minutes to crisp the skin.
  5. 5Remove the chicken from the broiler (or oven). Place on a hot platter. Spread with softened butter and sprinkle with additional salt and pepper to taste. Let rest for 5-10 minutes before carving and serving.
