Modern Broiled Chicken
A modernized version of a classic broiled chicken recipe, with options for oven-baking to ensure even cooking and prevent burning.
Ingredients
- 1 3-4 lb Whole Chicken (Suitable for broiling)
- 1 tsp Salt (Or to taste)
- 0.5 tsp Black Pepper (Freshly ground, or to taste)
- 2 tbsp Butter (Softened)
- 1 tbsp Cooking Oil (For greasing the broiler pan)
Instructions
- 1Preheat broiler to high. Rinse the chicken inside and out and pat dry with paper towels. Remove any giblets. Lightly grease a broiler pan with cooking oil.
- 2Sprinkle the chicken generously with salt and pepper, both inside and out.
- 3Place the chicken on the prepared broiler pan, skin-side up. Position the broiler pan so that the chicken is about 6-8 inches from the heat source. Broil for 10 minutes, then turn the chicken and broil for another 10 minutes. Watch carefully to prevent burning, adjusting the broiler pan as needed.
- 4If the chicken is browning too quickly or you want to ensure it's cooked through, preheat oven to 375°F (190°C). Dot the chicken with butter and bake for 10-15 minutes, or until the internal temperature reaches 165°F (74°C). Then, return to the broiler for the last few minutes to crisp the skin.
- 5Remove the chicken from the broiler (or oven). Place on a hot platter. Spread with softened butter and sprinkle with additional salt and pepper to taste. Let rest for 5-10 minutes before carving and serving.
