Modern Boston Favorite Cake

A classic American cake, updated for modern kitchens. This recipe yields a moist and flavorful cake, perfect for any occasion. Can be baked as two loaves or individual cupcakes.

Ingredients

  • 0.67 cup Unsalted Butter, softened (About 1 1/3 sticks)
  • 2 cups Granulated Sugar
  • 4 large Large Eggs
  • 1 cup Whole Milk
  • 3.5 cups All-Purpose Flour
  • 5 teaspoons Baking Powder
  • 1 teaspoon Vanilla Extract (Optional, for added flavor)

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans or a 9x13 inch baking pan. Alternatively, line cupcake tins with paper liners.
  2. 2In a large bowl, cream together the softened butter and sugar until light and fluffy. This will take about 3-5 minutes using an electric mixer.
  3. 3Beat in the eggs one at a time, mixing well after each addition. Add vanilla extract, if using.
  4. 4In a separate bowl, whisk together the flour and baking powder.
  5. 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  6. 6Pour the batter into the prepared pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. If baking cupcakes, bake for 18-20 minutes.
  7. 7Let the cake cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
