Modern Boston Favorite Cake
A classic American cake, updated for modern kitchens. This recipe yields a moist and flavorful cake, perfect for any occasion. Can be baked as two loaves or individual cupcakes.
Ingredients
- 0.67 cup Unsalted Butter, softened (About 1 1/3 sticks)
- 2 cups Granulated Sugar
- 4 large Large Eggs
- 1 cup Whole Milk
- 3.5 cups All-Purpose Flour
- 5 teaspoons Baking Powder
- 1 teaspoon Vanilla Extract (Optional, for added flavor)
Instructions
- 1Preheat oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans or a 9x13 inch baking pan. Alternatively, line cupcake tins with paper liners.
- 2In a large bowl, cream together the softened butter and sugar until light and fluffy. This will take about 3-5 minutes using an electric mixer.
- 3Beat in the eggs one at a time, mixing well after each addition. Add vanilla extract, if using.
- 4In a separate bowl, whisk together the flour and baking powder.
- 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
- 6Pour the batter into the prepared pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. If baking cupcakes, bake for 18-20 minutes.
- 7Let the cake cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
