Modern Boiled Beet Greens
A simple and nutritious side dish of beet greens, boiled and seasoned with butter, salt, pepper, and a touch of vinegar.
Ingredients
- 1 pound Beet Greens (Fresh beet greens)
- 4 cups Water (For boiling)
- 1 teaspoon Salt (Or to taste)
- 2 tablespoons Butter (Unsalted)
- 0.25 teaspoon Black Pepper (Freshly ground, or to taste)
- 1 tablespoon Vinegar (Apple cider vinegar or white vinegar)
Instructions
- 1Wash the beet greens thoroughly under cold running water. Scrape any remaining roots and cut off the ends of the stems.
- 2Bring 4 cups of salted water to a boil in a pot. Add the beet greens and cook for 15-20 minutes, or until tender. Drain the beet greens thoroughly.
- 3Return the drained beet greens to the pot. Add butter, salt, and pepper to taste. Toss to combine. Serve immediately with a drizzle of vinegar.
