Modern Boiled Beet Greens

A simple and nutritious side dish of beet greens, boiled and seasoned with butter, salt, pepper, and a touch of vinegar.

Ingredients

  • 1 pound Beet Greens (Fresh beet greens)
  • 4 cups Water (For boiling)
  • 1 teaspoon Salt (Or to taste)
  • 2 tablespoons Butter (Unsalted)
  • 0.25 teaspoon Black Pepper (Freshly ground, or to taste)
  • 1 tablespoon Vinegar (Apple cider vinegar or white vinegar)

Instructions

  1. 1Wash the beet greens thoroughly under cold running water. Scrape any remaining roots and cut off the ends of the stems.
  2. 2Bring 4 cups of salted water to a boil in a pot. Add the beet greens and cook for 15-20 minutes, or until tender. Drain the beet greens thoroughly.
  3. 3Return the drained beet greens to the pot. Add butter, salt, and pepper to taste. Toss to combine. Serve immediately with a drizzle of vinegar.
