Modern Berry Muffins

A modernized version of classic berry muffins, incorporating techniques from other muffin recipes for a light and fluffy texture.

Ingredients

  • 2.5 cups All-purpose flour
  • 0.5 cup Granulated sugar
  • 4 teaspoons Baking powder
  • 0.5 cup Unsalted butter, melted
  • 1 cup Milk
  • 1.5 cups Fresh or frozen berries (blueberries, raspberries, or mixed)
  • 0.5 teaspoon Salt
  • 1 Large egg

Instructions

  1. 1Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. 2In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. 3In a separate bowl, whisk together melted butter, milk, and egg.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. 5Gently fold in the berries.
  6. 6Fill each muffin cup about 2/3 full.
  7. 7Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. 8Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
